Run through all the stages since they complement each other towards a unified process. When you’ve done all 4 stages for a cycle either re-run, or jump to the specific stage that seems to be of use.
Because of all stages complementing each other towards a singular process, it makes more sense to be exposed to all of the stages, rather than sticking to one part of it. What you need to progress might just be in the next stage. You won’t be able to reprogram everything in one-go, since you’re missing the whole package.
It’s a bit like getting a recipe for a product, first you combine the dry products so you don’t get any lumps. Then you add in some fluid and mix it up. After that you can let it stand and ferment a little. Eventually you put it in the oven or make that final step, whatever it is. But if you get stuck on a singular part of the process, the end result won’t be as tasty. In some cases yes it can be beneficial to let something ferment a little longer, or deviate from the recipe by adding more/less salt. - But how would you know if you haven’t tasted the end-result and seen the process at close?
